Mercury is made with rye from our region and after fermentation is aged for at least 8 months in used Chardonnay wooden barrels. Due to the aging in the wooden barrel, aromas from the wooden barrel and oak pass into the beer. After aging, the Mercury is combined with fresh Mercury beer in an assemblage.
