End of the dry-january and beginning of the month with a big dry-hop from Simcoe. It’s been a while since we’ve released a binch with fruit or flowers in it and here we went big; guess where the tree went after December 25 and the close match with the name on the label? For the style, the White IPAs have always interested us so it was an opportunity to have fun and to underline the “piney” side of the Simcoe. Roughly speaking, white IPAs are hoppy white beers, something to combine the useful with the pleasant!
